Yogurt Pancakes

I have been buying big tubs of vanilla Chobani Greek Yogurt every week for months to make my healthy smoothie (I will be posting the healthier modifications soon).  Keith and I have been eyeing the Yogurt Pancakes recipe on the container for a while now.   This morning we decided to try them and they were GREAT and VERY filling.

Chobani Yogurt Pancakes

INGREDIENTS
1 ½ cup (12oz) Chobani Vanilla Greek Yogurt
1 ½ cup all-purpose flour
1 ½ tsp baking powder
3/4 tsp baking soda
½ tsp salt
1 large egg
¾ cup milk
Nonstick pan spray

PREPARATION
Combine dry ingredients.
Whisk wet ingredients, pour into dry mixture and stir until combined.
Over medium-high heat scoop 1/4 cup batter onto skillet per pancake.  Flip when bubbles appear. Cook until golden brown.

I looked up the recipe on chobani.com tonight and they have a different pancake recipe posted.  I think am going to stick with the one I posted since it has more yogurt (which means more protein) and they tasted great.

Insta-Friday

Saturday
After refinishing Reece's beds all day we went to supper and ice cream with our friends.

Once we got back from supper we set up the one finished Bunk Bed in Reece's room.  You think he is a little excited?!?

Monday
Waiting to check out at the grocery store

We bought a cantaloupe that Grady wanted to cut right after lunch.  Then I had Reece put the cut cantaloupe in the bowl.

Grady's school uniforms are in, now I just need to buy him belt.

 Tuesday
Playing with water and bubbles after Little Gym!

 Wednesday
After checking out some books at the library we went to Papa Johns to get the boys a free order breadsticks.  It was one of the prizes they earned for summer reading program.  Once I saw how big the order was we added some dips and cheese to make it their lunch.

 Thursday
We went to Morgan City with my Mom to see my cousin Mallory and her new baby Blakely.  I forgot to take pictures.  These are Grady playing with Grandma and Reece reading with Grandma after we got home from Morgan City.

 Friday
We met friends at the Louisiana Art and Science museum after playing for a while we walked over to the Shaw building to eat lunch and let the kids play in the fountains.

We ate pizza on the floor in the living room while watching the Olympics Opening Ceremony.  The boys enjoyed watching it and staying up late (they went to bed once the parade of athletes started).

Chicken/Turkey and Biscuits

We made The Pioneer Woman's Leftover Turkey Pot Pie recipe after thanksgiving with our turkey leftovers.  It was great but thought it would be even better with biscuits.  This is the second time we made this with biscuits and it is GREAT!!

Chicken/Turkey and Biscuits

1 biscuit package
1/2 stick butter
1/2 cup finely diced onion
1/2 cup finely diced carrot
1/2 cup finely diced celery
2 cups chicken or turkey, light and dark, diced or shredded (or both!)
1/4 cup flour
2 cups low-sodium chicken or turkey broth
splash of white wine (optional)
1 cup heavy cream
1 cup Frozen peas (optional)
Fresh thyme, chopped
salt and pepper to taste

Preheat oven to 350 degrees.

Melt butter in a skillet or dutch oven. Add onion, carrots, and celery, and cook until translucent (a couple of minutes.)

Add chicken or turkey and stir. Sprinkle flour over mixture and stir. Cook over medium heat for a couple of minutes, stirring constantly.

Pour in chicken or turkey broth, stirring constantly. Splash in wine (optional) Pour in cream. (Add frozen peas at this point if you’d like.)

Bring to a slow boil and allow mixture to cook and thicken for a few minutes. Add salt and pepper to taste (do not underseason), and fresh or dried thyme to taste. Do one final taste at the end and add what it needs.

Pour mixture into a casserole dish.   Place biscuits on top of mixture.

Bake for 15-20 minutes or until very golden and bubbly.

Allow to cool for a little bit before serving.  Serve with a large spoon.

I pack the boys a sandwich for supper to bring to the game with us.  I make Keith and I a Lean1 smoothie with bananas which we keep in the cooler to drink on the way home from the game.

Thursday
Grilled Tilapia topped with leftover Dr. Gumbo Crawfish Julie sauce
We have never tried this but on Dr. Gumbo site they a page with Recipes using Dr. Gumbo’s Cuisine and this was one of the ideas.   Last time we had a ton of leftovers so I thought this would be a great way to remix the leftovers.

Wednesday
We meet my friend Kate who is in town from Virginia at the LASM.  Then we came hope to find a package on the porch with a puzzle for Grady, cool laser lights and homemade turtle candies from Aunt Maureen.

After I put the boys down for nap/quite time.  I found this thing in the kitchen, I tried to get him out the back door without touching him.  He started to go up the curtains so once he ran in the laundry room I put a towel under the door so he was pinned in there.  The boys (really Keith) caught him that night after we got home from our soccer game.  I was calling him a newt but Liz's Aunt Pee thinks its a skink.  Whatever it is it is SOOOO gross.

Thursday
We went to the library and hung out at home

Friday
Playdoh in the morning

Grady thought it looked like chocolate

The boys enjoying turtle candies from Aunt Maureen.

At supper Reece told us that a girl in the library book had cute underwear.
After supper he showed me the girl.

We started out by making a S track then we added a U then Grady decided we needed to make a LSU track.

I am not normally the one tackling with the boys but somehow tonight I was the one getting tackled.  It's good to be a mom.

Kevin and Amber's Wedding Weekend!!

My Brother got married on July 7th to a sweet lady we all LOVE Amber.

When we would talk to anyone about them getting married before the wedding Grady would say but Aunt Amber is already your sister.  Well now it is official ... Amber I am so happy to have you as a sister.  Welcome to the Family!!

Rehearsal
July 6
The boys were the ring bearers... or as Reece told my mom their job was to ring the bells (I guess he did not know what a bearer was so filled it in with something he knew)

Here is Kevin and Amber at the Rehearsal Supper.   My Parents passed out leis since they were leaving for an Hawaiian Honeymoon Sunday after the wedding.

It was a LATE night for the boys.  But it was great to see everyone that was town already for the wedding.

 Wedding DAY
July 7
My mom's good friends had a wonderful Luncheon for all the friends and family that were in town for the wedding since the wedding did not start till 7pm.

This a picture of Kevin and his groomsmen in the GI-JOE sunglasses that my cousin Robert found and had to buy since they reminded him of Kevin's sunglasses as a child.  I am sure all the family remembers Kevin's GI-JOE sunglasses.  Robert that was so sweet of you and funny too :)

Kevin is putting in my late Grandpa O'Meara handkerchief that all his married Grandchildren held or wore on there wedding day.  I was the first Grandchild to get married just a year or so after my Grandpa passed.  I decided to use his handkerchief as my something old and something borrowed and then added new, blue monogramming with my name, spouses name and wedding date.   (Here is a link to an album with a picture from each cousins wedding... Married O'Meara Cousins if you have a picture please email it to me)

We had a wonderful time at the reception.

Teaching Colleen new dance moves and dancing Mallory into labor.  Well not really, but she did deliver Blakely Ann early morning on Friday July 13th.

Grady keep his tuxedo on the WHOLE night.  The boys were real good since we did not leave till after 12am. (Thank you for some of the pictures Liz)

Post Wedding Brunch and/or Lunch
July 8
Sunday my parents invited everyone over for breakfast and/or lunch before people headed back home.
We got to take an updated girl cousin picture.

We had a great time visiting and hanging out with the family.   It was a wonderful weekend.

It was awesome that everyone from both sides of our family (except my cousin's husband) were able to attend Kevin and Amber's Wedding.

Congratulations Kevin and Amber we are so happy for you!!
