Sausage & Red Pepper Calzones

Ingredients:

2 packages refrigerated pizza dough

6 Tbs. olive oil

7 oz. mild Italian sausage

1/4 yellow onion, sliced

1 large red bell pepper, seeded and thinly sliced

2 garlic cloves, thinly sliced

1 tsp. minced fresh oregano

3 oz. ricotta cheese

12 oz. mozzarella cheese, grated

6 Tbs. tomato sauce

6 Tbs. grated Parmigiano-Reggiano cheese

Directions:

Place a pizza stone on the middle rack of an oven and preheat the oven to 400ºF. On a lightly floured surface, divide the dough into 4 equal portions and roll and stretch them into 8-inch rounds.

In a 10-inch fry pan over medium heat, warm 1 Tbs. of the olive oil. Add the sausage, breaking it into small chunks, and cook until browned and cooked through, about 8 minutes. Drain on paper towels.

Wipe out the pan, set over medium heat and warm 1 Tbs. of the olive oil. Add the onion and cook, stirring occasionally, for 2 minutes, then add the bell pepper and garlic. Cook, stirring occasionally, until the vegetables are tender and beginning to brown, about 15 minutes. Transfer the vegetables to a large bowl, add the sausage, oregano, ricotta, mozzarella and tomato sauce and stir to combine.

Fold the dough over the filling and pinch the edges to seal.

Brush the tops of the calzones with the oil, then dust each with 1 Tbs. Parmigiano-Reggiano cheese.

Then carefully slide them onto the preheated pizza stone and bake for 12 to 15 minutes. Remove the calzones from the oven and let cool for 5 minutes before serving.

Tip

If the dough is too elastic and shrinks back when you roll it flat into full rounds, let it rest for 15 minutes before trying again.

Rolling over... FINALLY!!

Reece has been almost rolling over from his back to his belly since he was 4 months old, but could never get his arm out from under his belly (or he never really tried hard enough) because as soon as he would get on his belly he roll right back.

But yesterday morning this is how I found Reece .. he had rolled over and turned around in his "cage" (that is what Grady calls his crib).  And he was rolling back and forth all day yesterday.  I found him on his belly again this morning!!

Grady's last soccer game this season...

Here is the team picture.  I lot of the girls were not at the last game.

Swimming Lessons

On Monday Grady started taking swimming lessons at Crawfish Aquatics.  Kids can not start lessons here till they are 3 years old and parents are NOT allowed near the pool.  Well on Wednesday when I was waiting near the gate at the end of class they opened the gate and Grady's group was still swimming and I got to see Grady swimming.  It was amazing he was swimming from the step to his teacher a couple feet away and they she would get him and give him a little push and he would swim back to the step.  AMAZING!!  I would have never thought he would be swimming like that after only 3 days.  I am so happy I signed Grady up for 2 sessions, I just can not wait to see what he can do after 4weeks of swimming lessons.

From 2010 - 05

I took this video Friday night at our clubhouse pool.

Reece is 6 months old!!

Well he turned 6 months last Sunday (May 16).  Monday we went to the doctor for his well visit.
Weight: 16lbs 2.5oz - 25th percentile
Length: 26 1/2 in - 53rd percentile
Head Circumference: 17 1/2in - 71st percentile
Reece loves to eat baby food.  He is on stage 2 baby foods.  We have also started giving Reece big pieces of food (baby led weaning), he has had bananas and cooked carrots.  He also has started to drink water from a sippy cup, we do not give it to him much but it will be helpful on these upcoming HOT summer days.
Reece babbles and growls.  Yes you read that right he growls just like Grady, I mean you learn from what you hear and see and Reece hears Grady growling a LOT.  Reece now says bla bla and dada. Yeah he started saying dada on MOTHERS DAY, haha I don't mind I know they ALWAYS say dada first.
He is sitting up pretty good now but still needs the boppy or a pillow behind him because he will still just fall back when he gets tired.  He will stand up at his play table for a little while and loves to jump in the jumperoo.  He loves to play peepo with Grady (English way of saying Peekaboo, we started calling it that with Grady after our trip to London to see GGG).   He loves to chew on things and put toys in his mouth.
He has done a lot of things this month.. 1st plane ride, carousel ride, wagon rides, swimming in a pool, & spraypark.   He is such a sweet & happy boy we are so lucky to be blessed with two WONDERFUL boys!!
