Insta-Friday!

Saturday
Started off with Grady's final soccer game of the season at 8am.
After the game the team went to Mary Lee to have donuts and pass out medals.

After donuts Keith and Grady went to LSU for Mike's Kids Club Tailgating Party.
They got to go on a tour of Tiger Stadium.

Reece and I went to the Mall and then had Smoothies at home for lunch.

Press conference?!
Look how big the lockers are.
The Kid's Club provided them with lunch.
Then Grady had some Bouncy house time!

After that the went to watch the Spring Game.
Nachos and sprite and everything's all right :)

After a short nap Reece and I went to Caroline's 2nd Birthday!!
I am not sure why Reece's shirt came up during these pictures?!?!

Monday
Today at Grady's Gym they started summer registration.  I really wanted to sign Reece up but he needs to be 4 for the Jump N Jacks class, so they let him try it out to see how he would do.
Here is Reece on the bar over the foam pit.  They said Reece was the best listener in class.   So Grady and Reece will be taking gym at CG's this summer.

Tuesday
Turkey Stuffed Peppers for supper

Wednesday
Ice cream at CFA today. YUM!!

Thursday
Grady's school had a Thank You Breakfast for all the parents that volunteered this year.
They gave each of us this cute soap dispenser.

 Friday
After Faith Sharing Reece and I were playing outside and got to watch baby birds leaving their nest.

Playing soccer with Papa Andy!!
Papa Andy came to spend the night and bring us out to supper, but we had one HUGE problem.  The Geek Squad repair man (Clyde) had come at 3:30pm to fix our ice maker for the 4th time.  Once it was 6pm and our ice maker was still in 100 pieces we decided to pick up Greek for supper.  Then right when we were all sitting down to eat Clyde told us he had broken the freon line in our refrigerator and it was shot.  Thank goodness we have another fridge we use from drinks and extra freezer space.  So while Papa Andy and the boys ate supper Keith and I moved everything from the broken fridge to the other one.  Clyde finally left at 8pm Friday night and now we have to go to Best Buy tomorrow to get a new refrigerator.

Cookbook Club Review

Cookbook Club Review

Last week we tried this new recipe from the Cookbook Club on my Sister's Blog.

I went to 3 or 4 different stores looking for the black bean sauce, but could not find it anywhere.  I found that Hoisin Sauce can be substituted so I bought that instead.  I have to say I was not that impressed with this recipe.  It tasted good but it was not that flavorful, maybe the black bean sauce would have helped.  But I will not be making this again.

I have really liked the all the recipes I have made from a previous cookbook club book, Easy Chinese Recipes.  In those she uses fresh garlic, ginger and a mixture of sauces.   I think I will stick with Chinese recipes from that cookbook.

Mini Lasagna Cups

Mini Lasagna Cups

1/2 lb lean ground beef
/turkey
1 cup spaghetti sauce

1/2 tsp crushed red pepper flakes
1 1/2 cups part skim ricotta cheese
1 T fresh basil, chopped
1 T fresh oregano, chopped
1/4 teaspoon kosher salt

1/4 teaspoon pepper

24 wonton wrappers

1 1/2 cups shredded cheese

Preheat oven to 375 degrees.   Add spaghetti sauce and red pepper flakes to meat and stir to combine.

In a large bowl, combine the ricotta the basil, oregano, salt and pepper and stir to combine.

Coat a 12 cup muffin tin with cooking spray, and arrange a wonton wrapper in each cup. Take half the ricotta mixture and divide it among the 12 cups. Top with half of the meat sauce, and sprinkle with shredded cheese. Place another wonton wrapper over the cheese, and repeat the layers by adding the remaining ricotta cheese, meat sauce, and top with shredded cheese.

Bake at 375 degrees for 10 to 15 minutes until the cheese is melted and the wonton wrappers are golden. Cool in the muffin tin for 5-10 minutes before serving.

Makes 12 mini lasagnas or 4 servings.
