Bruschetta Grilled Chicken

4 small boneless skinless chicken breast halves
5 plum tomatoes, diced small
1 clove garlic, finely chopped
6 tablespoons good extra-virgin olive oil, 3 for marinate
1/4 cup fresh basil leaves, sliced into ribbons
2 tablespoon balsamic vinegar, 1 for marinate
1/2 cup shredded part-skim mozzarella cheese
Heat grill to medium heat. Meanwhile, place chicken in resealable plastic bag. Add 3 tablespoons extra-virgin olive oil and 1 tablespoon balsamic vinegar and seal bag. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 minutes (can marinate it all day if remember). Remove chicken from bag; discard bag and dressing.
Grill chicken on uncovered side of grill for about 6 minutes. Meanwhile, Add the tomatoes, garlic, 3 tablespoons extra-virgin olive oil, basil and balsamic vinegar to a bowl. Season with salt and pepper.
Turn the chicken over and grill 8 minutes or until chicken is done.
Place chicken on foil on the grill or oven safe plate. Top with cheese. Close lid till cheese is melted. Remove from grill and top with tomato bruschetta.
